Natural stone can be processed solidly. There is an abundance of different types of stone, all of which have their own special characteristics, and can be seen as personalities.
Choosing the "right" stone for a kitchen countertop application depends a lot on what you envision and how much naturalness you accept. If you have a feel for natural stone as a material, you can accept the signs of use even in borderline natural stones.
You could live with stones that patina from use. But there are also many customers who want natural stone but are not willing to live with signs of use. Once you realize that you think this way, you should buy rocks that are largely uncritical for use as kitchen countertops.
